by The Iron You
Baked chicken, chicken curry, chicken on the BBQ, chicken stir fry. We eat a lot of chicken in our house. The problem we have is we get stuck in routine. After working all day, it is easy to just default to what you know and stick with it. What you need is inspiration as well as a recipe that isn’t so daunting that you set it aside to try some weekend in the future. That is exactly what The Iron You has done for us with this Chicken Rollatini recipe! By taking chicken cutlets, combining them with some prosciutto and cheese you have an amazing alternative to your repeatedly relied upon baked chicken recipe.
As Lisa left this morning for work, we had a mini debate about what to eat for dinner tonight. I’ll be working late, and keeping the dinner plans easy but delicious is just what we need on a night like tonight. This recipe has already been sent her way as my suggestion, and I have no doubts that it will be received with a resounding “yes”.
So give this recipe a try and let The Iron You know if you agree with us that this is a wonderful alternative to the stuck-in-a-rut chicken dishes we’re all guilty of producing on a regular basis.
Wine Pairing Suggestion: Oaked Chardonnay
This chicken dish is killer and contains a lot of flavors. The cheese brings a creaminess, the ham a salty/briney-ness, and the chicken just wraps in a wonderful texture with its lighter flavors. We need a wine that can stand up to the ham and cheese, but doesn’t dominate the main focus of this dish, the chicken!
An oaked chardonnay may be just the ticket in this case. The flavors brought by Chardonnay will compliment the chicken, while making sure it is an oaked chardonnay will provide a creamy, buttery body that will be a great fit with the cheese and prosciutto.
